Humble Hummus

My healthy pick for this week is a humble food, known as hummus. Made of ground chick peas, AKA garbanzo beans, lemon, olive oil and tahini. Add to this your favorite flavor of choice: garlic, cumin, roasted red pepper, etc. and you are set. Hummus can be served with chips, with pita bread, with veggies, as a dip, or it can be a vegetarian substitute for cheese or mayo on sandwiches or salads. Personally, I love it with our very own GC Lavender Lavash (check it out seasonally at a farmers’ market near you!)

I use to buy the nationally known brand of pre-prepared hummus at the grocery store, but I always cringed a little at the price. One 8 z. container could go for $4 -$5. And with how I went through it at our house – phew! – it was a major investment!

I can’t tell you how liberating it felt once I found out how easy it was to make fresh hummus from scratch. Add to that, how much more economical it was….once I learned the secret to this week’s bonus recipe: home-made tahini!

Garbanzos are a good source of iron and dietary fiber. They also contain calcium and are a source of plant-based protein. Hummus with tahini made fresh at home is a flavorful healthy way to add plant-based protein into your diet. And, as you substitute this mouth pleasing side for other more cholesterol heavy foods (mayo and cheese) you can trim down your meals! This is why Humble Hummus makes it into this weeks Art for Life recipes!

Humble Hummus

Ingredients

  • 1 large can (29 oz.) Garbanzos (Chick Peas) drained
  • 1 lemon, juiced
  • 1/2 t. lemon zest
  • 3/4 c. water
  • 3 T. extra virgin olive oil
  • 1/4 t. powdered garlic
  • 1/8 t. cumin
  • 3 T. tahini (made fresh is preferred – see below)
  • 1/4 c. roasted red pepper for garnish (optional)
  • 1/8 c. pine nuts (optional)

Directions

  1. If you are making your own fresh tahini – do that first, then,
  2. Add tahini, garbanzos, lemon juice and zest, olive oil, water, and spices in a blender (I use a NutraBullet) and blend away!
  3. Please note you may need to do this in two batches – depending on the capacity of your blender.
  4. Spoon into bowl.
  5. Top with roasted red pepper, pine nuts (optional)
  6. Serve with chips, toasted pita bread, veggies or GC Lavender Mediterranean Lavash

Fresh Tahini

  • Servings: 1

Tahini made at home beats the flavor of jarred every time!

Ingredients

  • 3-4 T. hulled sesame seeds
  • 1 T. extra virgin olive oil

Directions

  1. Note: This makes just enough for the recipe for Humble Hummus, above. You can make more by doubling the recipe and keep it in the refrigerator for up to a week.
  2. Toast sesame seeds until lightly browned. To do this: place seeds in a dry frying pan and heat on low, shaking pan occasionally until the seeds are brown and fragrant, about 3-5 minutes.
  3. Remove from heat and let cool.
  4. Place cooled toasted seeds in small capacity blender or food processor.
  5. Add olive oil and blend into a thick paste.
  6. Add to hummus recipe!

Love of leafy soup pot

Love of Leafy Soup

Escarole is this weeks’ love of my life! I discovered how to use this (along with other greens) in soup – a very new concept for me. I thought these lettuce like things were only for salad! How wrong I was! This oh so simple soup works up super quick, can be a week night meal and provides a way to add green leafy to your diet in a new way!

So the plant, escarole, is a member of the chicory family and is also “confused” with it’s cousin, endive. (Actually, escarole is thought to be a curly leaf varietal of endive – which has spike leaves.) No matter, what is important is that this green is one of the bitter greens.

Even so, understanding how to cook this leafy can make it a go to green. And if you want to add the powerhouse of Vitamin K, (Good for your heart, blood and bones), Vitamin A, (supports eye health), and Folate, this nutrient dense food is for you!

Love of Leafy Soup

  • Servings: 6

An easy weeknight meal and a great way to add greens to your diet.

Ingredients

  • 4 oz. escarole
  • 6 oz. Swiss Chard (Or Spinach)
  • 8 c. vegetable broth
  • 2 T. extra virgin olive oil
  • 3-5 cloves fresh garlic finely chopped
  • 1/8 t. red pepper flakes (cayenne)
  • dash cumin
  • 4 oz. pasta (Mini Farfalle or Ditaleni)
  • 1/2 fresh lemon – juiced
  • fresh Parmesan cheese, grated.

Directions

  1. Heat garlic, cumin and red pepper gently in olive oil just until fragrant
  2. Add 8 c. vegetable broth and bring to a rapid boil.
  3. When boiling, add pasta, and cook until tender, about 10 minutes.
  4. Meanwhile, wash escarole and Swiss chard well under running water. Dry. Chop into 1 in. pieces.
  5. Add greens and cook just until tender, about 3 minutes.
  6. Add lemon juice, serve and top with Parmesan cheese.

Marathon In Glass

Paying homage to American stained glass artist Louis Comfort Tiffany, student work from Gallery’s Choice stained glass lamp class has tremendous results. The marathon of stained glass projects, these lamps are not exceedingly difficult, but take time and patience!

Heirlooms, those passionate about glass art will enjoy every moment of creation! This lamp features ring mottled style glass by Uroboros, has approximately 480 pieces, and took several months in class to make.

Lavender Ginger Cantaloupe Tea Bread

Often regarded as a summer fruit, here’s a way to enjoy it all year long!

The fruit is more versatile than one might think! Try this moist and tasty tea bread, with a cup of our GC Lavender Grey tea, of course!

Lavender Ginger Cantaloupe Tea Bread

  • Servings: 12
  • Difficulty: easy

A sweet flavorful recipe for tea time or any time of day.

Ingredients

  • 3 c. flour (sifted)
  • 3 eggs
  • 2 c. ripe cantaloupe (pureed or smashed)
  • 3/4 c. vegetable oil
  • 1 1/4 t. Saigon Cinnamon
  • 2 T. GC Lavender Candied Ginger, finely chopped (or 2 t. freshly grated ginger or 1/2 t. dried ground ginger)
  • 2 t. vanilla extract
  • 1/3 c. pecans finely chopped
  • 1 t. salt
  • 1 t. baking soda
  • 3/4 t. baking powder
  • 1/2 c. brown sugar (packed)
  • 1 1/2 c. sugar

Directions

  1. Pre-heat oven to 350 degrees F
  2. Grease and flour two 9 x 5 loaf pans.
  3. In a large bowl, combine flour, cinnamon, salt, baking powder, baking soda, and ginger. Whisk together. Set aside.
  4. Place oil, vanilla, brown and white sugar and cantaloupe in a stand mixer (or separate mixing bowl).
  5. Add eggs and mix until well combined.
  6. Fold in pecans.
  7. Add dry ingredients to wet, mixing until well incorporated.
  8. Pour batter into pans, dividing it evenly.
  9. Bake for 60 min. at 350F or until a wooden skewer inserted in center comes out clean.

Cantaloupe is an easy addition to your diet. And with research indicating there might be some sight saving benefit from this plants’ pigments, why not try embracing this “color theory”?

Add our GC Lavender Candied Ginger to your pantry staples. This culinary treasure is extremely versatile: Enjoy as a natural candy, use it in stir fry, or use it as we did here, in bakery!

Color theory is an all-encompassing term which attempts to provide guidance on the relationship between colors and the physiological impacts certain color combinations have. 

In today’s podcast, we will help you understand the relationship between colors and how we as human’s perceive them. If I say the word “encaustic” chances are 90% of you won’t know what I am talking about.  Mention cold wax, and I may lose even more of you.  Even if you are familiar with these art terms – would be able to describe the difference between them?  Probably not.

Now if I say “oil painting” – most all of you will give me a nod of understanding. We are familiar with the masters’ work in oils and have seen contemporary paintings in this medium.

Today we will explore the difference between hot and cold wax painting and discuss why you might enjoy exploring one vs. the other.  In addition, I’ll share my personal experiences learning about the exciting ways of incorporating bees wax with oil and other materials to take creativity to a new level. And if you’ve never tried it – painting with wax can be a bit intimidating.  This episode is for you!  We can demystify this amazing media and get you going.

Oh, Baby! Bok Choy Stir-Fry

Adding green leafy veg to one’s diet doesn’t have to be difficult or bland. Check out this super simple 15 min recipe for Baby Bok Choy. This makes a great side dish to just about any meat course or as a part of a vegetarian meal. The short cook time ensures the maximum amount of nutrition is retained.

This particular member of the cabbage family isn’t as pungent as most, and it’s sweet and crunch texture lends itself to fresh salads, soups as well as our featured recipe below!

Baby Bok Choy

A fresh, light, stir fry recipe perfect for a quick weeknight dinner.

Ingredients

  • 10 oz. baby bok choy (about three)
  • 3 cloves fresh garlic, minced
  • 1/4 t. red cayenne pepper
  • 2 T. olive oil
  • 1/3 c. vegetable broth
  • 2 T. GC Lavender Candied Ginger, finely chopped (or 2 t. freshly grated ginger or 1/2 t. dried ground ginger)
  • 1 T. soy sauce or “No-Soy Sauce” soy sauce substitute
  • fresh lemon

Directions

  1. Wash bok choy, drain, and cut into diagonal pieces. Separate the leafy green from the thicker stem pieces.
  2. Add olive oil, garlic and cayenne pepper to small frying pan and heat gently on low heat until garlic is fragrant, about 45 seconds.
  3. Mix in ginger.
  4. Add thicker stem sections of bok choy to the pan and increase to medium heat.
  5. Saute bok choy for 3-5 minutes covered, until slightly translucent on edges.
  6. Add broth, soy sauce and remaining leafy green portions of the bok choy.
  7. Add a squeeze of fresh lemon juice.
  8. Cook an additional 5 to 10 minutes, uncovered, until tender.

Bok choy is a cruciferous vegetable, like kale, Brussel sprouts, broccoli, cauliflower and collard greens. For me, adding greens like Bok Choy to my diet makes good healthy sense. With vitamins C, A, B6 and K, beta-carotene, folate, and calcium in the mix, Bok Choy is rich in nutrients as well as a good source of fiber.

A casual perusal of the web shows numerous studies siting the healing benefits of this class of vegetables – helping the body fight cancers, prevent heart disease, ensure healthy bones, etc. With so much to offer, why not explore these vitamin dense, lo calorie foods? What have you got to loose?
